Let’s get started! To make this puff pastry pizza recipe, you will need the following ingredients:

  • Puff Pastry: To make things easy, I like to use the frozen pre-rolled sheets of puff pastry that can be found at the grocery store. Thaw according to package directions.
  • Egg wash (optional): For a shinier more golden crust.
  • Sauce: Choose your favorite! You can use pizza sauce (tomato sauce), white pizza sauce (Bechamel sauce), pesto, BBQ sauce, etc.
  • Cheese: Shredded mozzarella or the cheese of your choice.
  • Pizza Toppings: Your favorite pizza toppings. See the Topping Ideas section below for inspiration.

How To Make Puff Pastry Pizza

Puff pastry pizza is super easy to make! Simply…

STEP 1: Cut puff pastry. Carefully unroll the thawed puff pastry sheet and place on a large baking sheet lined with parchment paper. Using a paring knife, cut the pastry into 4 to 16 pieces (cut into 4 to 6 pieces for lunch or dinner size slices or into 9, 12 or 16 squares for appetizers and bite size snacks). Spread out on the baking sheet, leaving space between each one.

Optional: For a more defined looking crust, use a paring knife to score a 1 cm (about 1/2 inch) border around the edge of each square. Don’t cut all the way through. Poke some holes in the center part of each puff pastry square with a fork.

Optional Egg Wash: For a shinier, more golden crust, brush each piece with egg wash (1 egg beaten with 1 tablespoon water).

STEP 2: Prebake crust. Bake for 8-10 minutes in a 400F/200C oven or until the puff pastry begins to puff up and turn a light golden color. Remove from the oven. Gently press down the centers of each puff pastry piece, leaving the outer edges puffed up.

STEP 3: Add toppings. Spread sauce evenly all over the center of each piece, leaving a crust around the edges. Top with cheese and toppings of choice. You can either top them all the same or vary them.

STEP 4: Bake and enjoy. Place back in the oven and bake for another 10 minutes or until cheese is melted and bubbly. Serve and enjoy!

Here are a few ideas for inspiration. You can also set out a variety of different toppings and let everyone build their own pizza!

Helpful Tips

  • Prebake the puff pastry! Blind bake or prebake the crust first before adding the toppings. This ensures that the finished puff pastry pizza will be fully cooked through with a flaky crispy crust that is not soggy.
  • Use egg wash for golden color. The egg wash is an optional step. However, I recommend it if you would like a shinier, more golden crust. Some say that it also creates a moisture barrier so that the sauce doesn’t penetrate the puff pastry crust. However, I didn’t notice much of a difference in that regard while testing. The difference was mostly in the color.

Storage & Reheating

  • Storing leftovers: Allow the pizza to fully cool before storing it in an airtight container in the fridge for 3-4 days.
  • Reheating: Reheat in a 350F oven on a lined baking sheet for 10-15 minutes or until cheese is hot and melty again. You could also reheat in an air fryer (adjust temperature and timing based on your model).
  • Freezing: I don’t recommend freezing this puff pastry pizza.

A Few Questions Answered

Why is my puff pastry pizza soggy?

There are a couple of reasons for this. You either didn’t pre-bake the crust before adding your toppings (blind baking) or perhaps you’ve added too many toppings that are watery. For example, many veggies release liquid while baking so it can be a good idea to either add less of them or cook them before adding as a topping (i.e. roasting, grilling or sautéing first).

Is puff pastry the same as pizza dough?

No, it’s a very different type of dough and has a different texture. The puff pastry will produce a crust that is light, flaky and buttery.

Are you supposed to roll out puff pastry?

I like to buy the pre-rolled puff pastry sheets. Therefore, no rolling is necessary!

  • 1 sheet frozen puff pastry, thawed according to package directions
  • optional egg wash: 1 egg beaten with 1 tablespoon water
  • 1/4 cup sauce (tomato sauce, white sauce, pesto, BBQ sauce, etc.)
  • 1 cup shredded mozzarella or cheese of choice (or just measure with your heart!)
  • pizza toppings of choice (see notes for some ideas)

Instructions

  1. Preheat oven: Preheat oven to 400F / 200C. Line a large baking sheet with parchment paper and set aside.
  2. Cut puff pastry into pieces: Carefully unroll the puff pastry sheet and place on the lined baking sheet.  Using a paring knife, cut the pastry into 4 to 16 pieces (cut into 4 to 6 pieces for lunch or dinner sized slices or into 9, 12 or 16 squares for appetizers or bite size snacks). Spread out on the baking sheet leaving some space between each one.
  3. Score border (optional): For a more defined looking crust, use a paring knife to score a border (about 1 cm or 1/2 inch) around the edge of each square (don’t cut all the way through).  Poke some holes along the center part of each piece with a fork.
  4. Brush on egg wash (optional): Brush egg wash all over the top of each puff pastry square for a shinier, more golden crust.
  5. Prebake crust: Bake for 8-10 minutes or until the pastry begins to puff up and turn a light golden color.  Remove from oven.
  6. Add toppings: Gently press down the centers, leaving the outer edges puffed up.  Spread sauce evenly all over the center of each puff pastry square, leaving a crust around the edges.  Top with cheese and pizza toppings of choice.
  7. Bake: Place back in oven and bake for another 10 minutes or until cheese is melted and bubbly.

    We do pizza movie night every week and it was such a fun treat to do pizzas in a different way this week. We made a whole bunch of little ones and got to do mulitple flavours/toppings and try some new things! It was a ton of fun and delicious too.

    YUM. I mean, what’s not to like? Personalizable, easy-to-make pizza? Check. Buttery, flaky, low-effort puff pastry? CHECK. This is just an awesome idea overall. I make my own pizza dough quite frequently (there’s a batch proofing right now, in fact), but it takes time. This is an awesome variation to have in the bank. Also yes, I WILL be measuring mozarella with my heart. Lol.
