Creamy Peach Popsicles

Description

These peach popsicles taste like peaches and cream in frozen form. They’re creamy, bursting with sweet, juicy peach flavor, incredibly refreshing and SO GOOD. Even better? They come together with just 4 simple ingredients and about 5 minutes of prep… then the freezer takes care of the rest.


Ingredients

Scale
  • 3 cups sliced ripe peaches, fresh or thawed from frozen
  • ½ cup heavy cream (or coconut cream)
  • ¼ cup honey (or maple syrup or organic cane sugar)
  • 1 teaspoon vanilla extract


Instructions

  1. Blend: Add all the ingredients into a blender and blend on high until the mixture is smooth and creamy.
  2. Pour into popsicle molds: Pour the mixture into your popsicle molds, leaving a little space at the top for them to expand.
  3. Freeze: Freeze for at least 4-6 hours or until solid (preferably overnight!).  Enjoy!

Notes

  • Peaches: Ripe, juicy peaches will give you the sweetest, best flavor. There’s no need to peel them if you’re using a powerful blender.  I just give them a good wash, remove the pit, slice them up and let my Vitamix blend them up into a smooth mixture. If you are using frozen peach slices, make sure to let them thaw first so they blend up easily into a smooth, pourable mixture.
  • My favorite popsicle mold: I’ve had this stainless steel popsicle mold for many years and I absolutely love it! It’s super durable, makes those beautiful classic-style popsicles you see in all my popsicle recipes and the popsicles slide right out after just a few seconds under warm water. I also love that each popsicle has its own individual mold instead of being connected in one big tray.
