Description

Looking for a super refreshing and delicious drink to enjoy this summer? Then you need to try this Strawberry Mojito Mocktail recipe! It’s the perfect blend of sweet strawberries, zesty lime, fresh mint and a fizzy splash of soda water. Includes both a muddled version and blender version to try.

Muddled Version (makes 1 drink):

  • 1/2 cup sliced or quartered fresh strawberries
  • 1/2 lime, cut into wedges
  • 1 teaspoon honey (or to taste)
  • 5 fresh mint leaves
  • ice cubes or crushed ice
  • 1/2 cup (4 ounces) chilled soda water or sparkling water
  • Optional garnish: sprig of fresh mint, lime slices and strawberries

Blender Version (makes 2 drinks):

  • 1/2 cup coconut water
  • 1 cup sliced or quartered fresh strawberries
  • 10 fresh mint leaves
  • 2 tablespoons fresh lime juice (usually from 1 lime)
  • 1 tablespoon honey (or to taste)
  • ice cubes or crushed ice
  • 1 cup (8 ounces) chilled soda water or sparkling water
  • Optional garnishes: sprig of fresh mint, slice of lime and strawberries

Instructions

Muddled Version:

  1. Muddle strawberries and lime: Add sliced or quartered strawberries, lime wedges and honey to a tall cocktail glass. Muddle until the strawberries and lime wedges break down.
  2. Gently muddle mint: Add the mint leaves and give it just a few taps with the muddler to gently bruise it and release the oils.
  3. Add the soda water: Add a handful of ice cubes. Give it a stir to combine. Top with chilled soda water or sparkling water. Gently stir again.
  4. Garnish and serve: Garnish with a fresh sprig of mint, extra lime and strawberries if you like. For easy sipping, also add a straw. Enjoy!

Blender Version:

  1. Blend: Place coconut water, strawberries, mint leaves, lime juice and honey in a blender. Blend on high until smooth.
  2. Assemble: Fill two tall glasses with ice cubes. Divide blended mixture between the two glasses and top off with soda water (1/2 cup per glass).
  3. Enjoy: Garnish glasses if you like with strawberries, mint and lime. Pop in a reusable straw and enjoy!

Notes

  • Muddler: For the muddled version, you will need a muddler. Don’t have one? No worries! You can also the handle of a sturdy wooden spoon, the end of a thinner wooden rolling pin or the tamper that comes with some blenders like Vitamix.
  • For a pitcher (8 servings): Place 4 cups sliced or quartered strawberries, 4 limes cut into wedges and 3 tablespoons honey (or to taste) in a pitcher and muddle until strawberries and lime break down. Add 40 mint leaves and lightly muddle again. Add ice cubes to the pitcher and pour in 4 cups chilled soda water or sparkling water. Give it a stir to combine. Serve in glasses filled with ice. Garnish with extra mint and strawberries and lime wedges, if desired.
