Description
Grab some sweet blueberries and Greek yogurt because you’re going to want to make these creamy blueberry popsicles. These two simple ingredients are the stars here, with a few little extras that make them extra creamy, extra yummy and the perfect frozen treat for hot summer days.
Ingredients
Scale
- 1 ½ cups fresh blueberries
- ¼ cup honey or maple syrup
- ¼ cup cream (heavy cream, half-and-half or table cream)
- ½ teaspoon lemon zest
- 1 cup full-fat Greek yogurt
Instructions
- Blend the blueberry mixture: Add the fresh blueberries, honey or maple syrup, cream and lemon zest to a blender. Blend until smooth.
- Add the yogurt: Add the Greek yogurt and give it a very quick blend on low speed, just until everything is combined (making sure not to over-blend!). You can also simply stir it through by hand.
- Fill the popsicle molds: Pour the blueberry yogurt mixture into your popsicle molds, leaving a little room at the top. This recipe makes 6 large popsicles in my favorite mold but the yield may vary depending on the size of your molds.
- Freeze and enjoy: Freeze for at least 4-6 hours or until the popsicles are completely firm (preferably overnight!). When you’re ready to enjoy, run the mold under warm water for a few seconds and it should slide right out.
Notes
- My Favorite Popsicle Mold: I really, really love this stainless steel popsicle mold. I’ve had mine for years and use it all the time (definitely one of those kitchen purchases that has been worth every penny). It makes those classic popsicle shapes you see in all my popsicle recipes and the popsicles slide right out after just a few seconds under warm water. No wrestling with the mold or waiting forever for it to release! I also love that each popsicle has its own individual mold instead of being stuck together in one big tray. Makes a huge difference!
