Description

Transform those weekend pancakes or bacon and eggs into a fun and cute Easter themed breakfast.  This Easter Bunny Breakfast idea is easy to make and kids love it!


Ingredients

Scale

Bunny Pancake:

  • 1 pancake
  • 1 slice bacon
  • 2 chocolate chips or blueberries
  • 1 strawberry, use the tip (or a raspberry)
  • 6 thin “whisker shape” strips of pineapple

Fried Egg Bunny:

  • 1 fried egg (sunny side up)
  • 1 slice bacon
  • 2 blueberries (or substitute black olives)
  • 6 chives or thin strips of cheese cut into “whiskers”

Scrambled Egg Bunny:

  • 2 scrambled eggs
  • 1 slice bacon
  • 2 blueberries
  • 1 raspberry
  • 6 thin strips of cheese or chives cut into “whiskers”

Instructions

  1. Cook bacon:  Cut bacon slice in half.  Cook to desired level of crispiness and transfer to a paper towel lined plate.
  2. Make pancakes or eggs:  Make pancakes, fried egg (sunny side up) or scrambled eggs depending on the variation you want to make.  Or make a variety!
  3. Assemble:  Time for the fun part!  See below for instructions for each version.  The post also contains step by step photos for each variation.

Pancake Version: Place a pancake on a plate.  Position the bacon as ears.  Place the chocolate chips or blueberries as the eyes, the tip of a strawberry or raspberry as the nose and thin pineapple strips as whiskers.

Fried Egg Version: Place the fried egg on a plate.  Position the bacon as ears.  Add two blueberries for eyes and place the chives or thin cheese strips on as whiskers.

Scrambled Egg Version: Scoop the scrambled eggs into a small bowl or ramekin.  Position the bacon as ears.  Add two blueberries for eyes, a raspberry for the nose and thin strips of cheese or chives as whiskers.


Notes

  • This recipe is for one Easter Bunny Breakfast for demonstration purposes.  However, you will usually cook off a bunch of pancakes, eggs or bacon at once.  Simply repeat the assembly process to make additional bunny pancakes or eggs.
  • Cooking Bacon:  I prefer to cook the bacon in the oven.  Cut each slice in half and lay on a baking sheet that has been lined with parchment paper.  Cook in a 400F (200C) oven for 15-20 minutes depending on how crispy you like it (timing also depends on thickness of bacon).  Remove from the oven and transfer bacon to a paper towel lined plate.
