If you’re a strawberry lover, these homemade strawberry popsicles are about to become your new summer favorite! They’re packed with fresh strawberries, bursting with sweet flavor and have one little added ingredient that gives them an extra strawberry boost. SO refreshing on a hot day and definitely a freezer essential if you ask me!
Ingredients

- 2 pints fresh strawberries, washed and hulled (about 4 cups)
- ⅓ cup honey
- ¼ cup water
- 2 tablespoons strawberry jam
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract or vanilla bean paste
Instructions
- Blend popsicle mixture: Place all the ingredients into a blender and blend on high until smooth.
- Pour into popsicle molds: Pour mixture into your popsicle molds, leaving a little space at the top for them to expand.
- Freeze and enjoy: Freeze for 4-6 hours or until completely firm. I usually just pop them in the freezer overnight so they’re ready to enjoy the next day.
Notes
- Strawberry Jam: This is the special extra ingredient that gives these popsicles an extra boost of concentrated strawberry flavor. I used this strawberry jam but your favorite brand will work too.
- My Favorite Popsicle Mold: I LOVE this stainless steel popsicle mold. I’ve been using it for years and years, definitely a worthwhile purchase! It makes those beautiful classic-style popsicles you see in all my popsicle recipes and they easily slide right out after a few seconds under warm water (no fighting with the mold!). I also love that each popsicle has its own individual mold instead of being connected in one big tray.
- Don’t waste the extra! If you have some popsicle mixture left over, don’t pour it down the drain, it tastes way too good! I love mixing it with sparkling water for a delicious strawberry soda or making a strawberry matcha. Also delicious drizzled over some Greek yogurt!
