  • Fresh strawberries: The star of the show! The sweeter and juicier your strawberries are, the better these popsicles will taste.
  • Honey: Sweetens the popsicles and also reduces ice crystals from forming. You can also use maple syrup or organic cane sugar if you prefer.
  • Water: To help everything blend up nice and smooth. Coconut water works great too.
  • Strawberry Jam: This is the special extra ingredient that gives these popsicles an extra boost of concentrated strawberry flavor. I used this strawberry jam but your favorite brand will work too.
  • Lemon Juice: Just a squeeze of fresh lemon juice brightens everything up and makes the strawberry flavor pop.
  • Vanilla: Strawberries and vanilla are such a good match. A little vanilla extract or vanilla bean paste adds the perfect finishing touch.

Tools You’ll Need

All you need is a blender, popsicle molds and a little room in your freezer.

  • Blender: A blender is needed to blend up the popsicle mixture. I use a Vitamix which is a high-powered blender but any blender should do the job since fresh strawberries blend up pretty easily.
  • Popsicle Molds: A good popsicle mold makes all the difference! It’s so frustrating to wrestle a popsicle that refuses to come out. Here are a few great popsicle molds to check out.

My Favorite Popsicle Mold

I LOVE this stainless steel popsicle mold. I’ve been using it for years and years, definitely a worthwhile purchase! It’s incredibly durable, makes those beautiful classic-style popsicles you see in all my popsicle recipes and they slide right out after a few seconds under warm water (no fighting with the mold!). I also love that each popsicle has its own individual mold instead of being connected in one big tray.

How To Make Strawberry Popsicles

Ready to make some amazing strawberry popsicles? They couldn’t be easier! Just blend, pour, freeze… and then try not to eat them all at once.

  1. Add everything to the blender: Add 2 pints strawberries (washed and hulled, about 4 cups), ⅓ cup honey, ¼ cup water, 2 tablespoons strawberry jam, 1 tablespoon fresh lemon juice and 1 teaspoon vanilla extract or vanilla bean paste to your blender.
  2. Blend: Blend on high until smooth.
  3. Pour into popsicle molds: Pour mixture into your popsicle molds, leaving a little space at the top. Note: This recipe makes 6 large popsicles in my favorite mold plus some extra (see my tips below for my favorite way to use it up!).
  4. Freeze and enjoy: Freeze for 4-6 hours or until completely firm. I usually just pop them in the freezer overnight so they’re ready to enjoy the next day.

Helpful Tips

A Few Tips

  • Leave a little room at the top: Don’t fill the popsicle molds to the very top. Leave a little space (about ¼ inch) so the popsicles have room to expand as they freeze. No mess this way!
  • For easy release: Run the outside of your popsicle mold under warm water for a few seconds.
  • Don’t waste the extra! If you have a little popsicle mixture left over, don’t pour it down the drain, it tastes way too good! I love mixing it with sparkling water for a delicious strawberry soda or making a strawberry matcha. Also delicious over some Greek yogurt!

FAQ

Can I reduce the honey?

Cutting back a little might be ok but I wouldn’t reduce it too much. The honey isn’t just there for sweetness. It also helps keep the popsicles soft and less icy by reducing ice crystals. Cut back too much and they’ll freeze a lot harder.

Can I use frozen strawberries?

You can but make sure to thaw them first so they blend up easily. That said, if fresh, in-season strawberries are available, they’ll give you the sweetest, most intense strawberry flavor.

How long do they take to freeze?

Plan on at least 4 to 6 hours but I usually just freeze them overnight. The exact timing will depend on your freezer and the size of your popsicle molds.

How to store homemade popsicles?

These homemade popsicles keep well in the freezer for 1 to 2 months, although they’re definitely at their best in the first few weeks. You can leave them in the popsicle mold or unmold them and wrap each one tightly in plastic wrap before storing in a freezer bag or freezer safe container. Just work quickly so they don’t start melting while you’re wrapping them!
