Ingredients You’ll Need
You will need the following ingredients to make these baked cheeseburger tacos…
- Ground beef mixture: I prefer to use lean ground beef (you could also use ground turkey or chicken as well). To season it up, it gets cooked with chopped onion, a little ketchup, mustard, salt and freshly ground black pepper.
- Taco shells: Crunchy hard taco shells
- Cheddar cheese: I prefer shredding it myself since it has a nicer texture than the pre-shredded stuff.
- Burger toppings: Top with your favorite burger toppings. I like to add shredded lettuce, chopped dill or sweet pickles, chopped white or sweet onions, and chopped tomatoes.
- Burger sauce: Finish it off with a drizzle of this easy burger sauce – a mix of mayo, ketchup and yellow mustard.
I like to look for ketchup made with simple ingredients (e.g. no high-fructose corn syrup). Check the label because even the same brand in different countries can be made differently (e.g. US vs Canada).

How To Make Cheeseburger Tacos
These baked cheeseburger tacos are easy to make! Let’s make some!
Step 1: Cook the ground beef mixture
Heat a large skillet over medium-high heat. Add the ground beef and chopped onion. Cook until the ground beef is browned, breaking up the meat with a wooden spoon or spatula. Drain off any excess fat. Stir in the ketchup and mustard and season to taste with salt and freshly ground black pepper.
Step 2: Assemble tacos for baking
Arrange the taco shells standing up in a 9×13 baking dish (like a Pyrex dish) and bake for 5 minutes by themselves in a 400F/200C oven to allow them to crisp up. Remove from the oven.
Sprinkle a bit of shredded cheddar cheese in the bottom of each taco shell (about 1 tablespoon in each shell). Divide the beef mixture among the taco shells. Top with the remaining shredded cheese.
Step 3: Bake tacos
Bake for 8-10 minutes or until the cheese is melted and edges of the taco shells are browned.
Step 4: Prepare burger sauce and toppings
While the tacos are baking, whisk together the burger sauce ingredients in a small bowl and chop up the other toppings.
Step 5: Add toppings and serve
Remove the tacos from the oven and serve immediately topped with your favorite burger toppings and a drizzle of the burger sauce. Enjoy!

Pro Tip: Keeping Baked Tacos Crispy
I recommend doing two things (which I have written into the recipe instructions) in order to keep your cheeseburger tacos crispy when baking.
- Bake the taco shells alone first before filling them to start off with a crispy base.
- Adding a bit of cheese to the bottom of the taco shells (instead of just on top) helps to create a barrier between the meat mixture and the taco shell.
Storage Tips
- Leftovers: These tacos are best served immediately while still warm and crunchy. If you do have leftovers, store in the fridge for up to 3 days and reheat on a baking sheet in a 350F (180C) oven for about 8-10 minutes.
- Prep Ahead: The ground beef mixture could be made ahead and stored in the fridge until ready to assemble the tacos for baking. The burger sauce could also be whisked together in advance and stored in the fridge.

Absolutely! Just thaw it first before cooking. You can also substitute the ground beef for any type of ground meat you might have on hand in the freezer like ground turkey or ground chicken.
I use a 9×13 glass baking dish since I have a couple of them on hand and find it to be a good size to line up the shells in so that they support each other and stay upright. You could also use other sizes or perhaps multiple smaller baking dishes (as long as you can arrange the taco shells to stay upright).
A few side dish ideas that would work well alongside these are: oven fries, corn on the cob or a nice salad.
