If you’re a fan of nachos (who isn’t?), you won’t be able to resist these cheesy steak nachos! Loaded with thinly sliced steak, melted cheese, all your favorite toppings and a drizzle of salsa verde crema. These nachos are a delicious easy way to use up leftover steak and a total crowd pleaser!

Ingredients You’ll Need
You will need the following ingredients to make these easy steak nachos:
- Tortilla Chips: Use thicker, sturdy tortilla chips. The thin ones don’t work as well for sheet pan nachos since they get soggy easily and aren’t strong enough to hold up the toppings!
- Steak: Thinly sliced leftover steak of choice (or freshly cooked). Make sure to slice against the grain for tender slices of steak.
- Shredded Cheese: I like to use a mix of Monterey Jack, cheddar and mozzarella. I prefer to grate my own cheeses since they melt better than the pre-shredded stuff which has a coating on it so it doesn’t clump together in the bag. It is also more cost effective to buy the blocks and grate your own cheese.
- Red Onion: Finely chopped.
- Corn: You can use fresh, frozen, canned or roasted.
- Easy Salsa Verde Crema: A simple mixture of sour cream, salsa verde, lime juice and a pinch of salt. So good drizzled on top of steak nachos!
- Fresh Toppings: Diced tomatoes or pico de gallo, diced avocado, chopped cilantro or green onions and pickled jalapenos are added to the nachos once they come out of the oven for a pop of fresh flavor and texture.
- Serve With: Sour cream, salsa or pico de gallo, guacamole and lime wedges.

Step 1: Prepare Salsa Verde Crema
Whisk together the sour cream, salsa verde, lime juice and a pinch of salt in a small bowl and set aside.
Step 2: Assemble Steak Nachos
- Spread the tortilla chips out in an even layer on a large baking sheet that has been lined with parchment paper.
- Sprinkle half of the shredded cheese over the tortilla chips (to bind your toppings to the chips).
- Top with sliced steak, chopped red onion and corn.
- Sprinkle the remaining cheese over the top to seal in those toppings.
Step 3: Broil and Top
Place under the oven broiler for 3-4 minutes or until the cheese is melted and bubbly and chips are crispy. Watch carefully so it doesn’t burn! Remove from oven and top with the fresh toppings (diced tomatoes or pico de gallo, diced avocado, pickled jalapenos and chopped cilantro and/or green onions). Drizzle over the salsa verde crema.
Step 3: Serve
Serve immediately with guacamole, salsa or pico de gallo, sour cream and lime wedges on the side. I prefer to serve these on the side instead of dolloping all over the top since it prevents the nachos from getting soggy and also lets everyone add as little or as much as they like.
Tip: Make sure to have all the fresh toppings chopped and ready to add so that the nachos can be served immediately while the cheese is still hot and melty.
Possible Variations
There are so many ways to customize these steak nachos! Here are a few ideas:
- Add different veggies/toppings: Switch up the veggies and toppings in the recipe. Use what you enjoy or have on hand.
- Use different cheeses: Use your favorite cheese or blend of cheeses that melt well.
- Make it more or less spicy: Prefer it mild? Just skip the pickled jalapenos. Like it extra spicy? Add some chopped chilis, spicy cheese or serve with hot sauce and spicy salsa on the side.
Storage Tips
- Leftovers: Nachos are best enjoyed immediately straight out of the oven. But if you happen to have leftovers, store them in the fridge for up to 3 days. To avoid them from getting too soggy and make them easier to reheat, scoop the fresh toppings off and store separately.
- Reheating: To reheat, place the nachos on a baking sheet and bake for about 10 minutes at 350F (180C). The chips will crisp back up (but not as crisp as the first time). Feel free to add some extra cheese before reheating and perhaps some new fresh toppings when they come out of the oven.
A Few Questions Answered
In short, any type you have leftover works best for some quick and easy steak nachos. If you plan on cooking up a fresh steak, any cut works.
Start with a sturdy chip (nothing too thin). Make sure to add any “wet” toppings like salsa, sour cream and guacamole immediately before serving or even better just serve them on the side.
These steak nachos are placed under the broiler since there aren’t many veggies on them that need to get cooked and softened a bit like in these Loaded Veggie Nachos. Also a quick broil helps to not overcook the steak.
I wouldn’t since they could get soggy! However, you can prep all the ingredients ahead of time (shredding cheese, chopping veggies, prepping toppings, etc.) so that the nachos can just be quickly assembled and popped in the oven when ready to enjoy.
For an easy weeknight dinner, you can just serve these nachos as the complete meal. For parties or to stretch out the meal further, you can also serve a few sides like a salad, rice dish, etc. Any of these delicious side dishes for fajitas would also pair perfectly with nachos.

- 3–4 cups shredded cheese (I like to use a mix of Monterey Jack, cheddar and mozzarella)
- 1 ½ cups thinly sliced leftover steak (or freshly cooked)
- ½ small red onion, finely chopped
- ½ cup corn kernels (fresh, frozen, canned or roasted)
Fresh Toppings:
- ½ cup diced tomatoes or pico de gallo
- 1 avocado, diced
- ¼ cup roughly chopped cilantro or green onions (or both)
- ¼ cup pickled jalapenos (optional)
