Let me just start off by saying that I am not a blue cheese lover and yet I can’t get enough of the gorgonzola cream sauce on this pasta! It’s delicious, decadent, super creamy and pairs so well with the steak and pasta – YUM!

Ingredients You’ll Need

Let’s get started! Here’s what you’ll need to make this creamy steak pasta dish…

  • Steak: Any cut you like! I like to use filet mignon. This pasta dish is a cost effective way to indulge in this tender cut since one filet mignon is split between 2 people. You can easily purchase a single steak from the butcher or thaw one from the freezer if you subscribe to a meat subscription box like ButcherBox or truLocal.
  • Pasta: I like to use fettuccine or linguine for this dish but you can use any pasta shape you enjoy. Rigatoni is also a nice option!
  • Avocado Oil: Or other high heat oil to sear the steak.
  • Salt & Pepper: Coarse salt and freshly ground black pepper to season the steak.
  • Gorgonzola Sauce Ingredients: For the sauce, you will need butter, shallot, garlic, heavy cream, Gorgonzola cheese, Parmesan cheese, a touch of white wine vinegar, salt and freshly ground black pepper. Please note that there are two main types of Gorgonzola – Gorgonzola Dolce (creamier and milder) and Gorgonzola Piccante (firmer and stronger). I recommend using the dolce but the choice is yours! Another creamy mild option is Cambozola (trim off any rind).
  • Garnish: Adding garnish is the perfect finishing touch. A few options include: grated Parmesan cheese, freshly ground black pepper, chopped fresh chives or parsley or even some baby arugula.

How To Make Creamy Steak Gorgonzola Pasta

Let’s start cooking! This incredible dish is simple to make.

STEP 1: Sear the steak. Season both sides of the steak with salt and pepper. Heat a cast iron skillet over medium-high heat and add the avocado oil. Once the oil shimmers, sear the steak for a few minutes on each side until it reaches your desired doneness. Set aside on a cutting board to rest.

Tip: Use a digital meat thermometer! I love my Thermapen for perfectly cooked meat. For medium rare, remove when it reads 125F (it will continue to cook a bit more as it rests).

STEP 2: Cook the pasta. Bring a large pot of salted water to a boil and cook the pasta according to package directions. Make sure to reserve about ½ cup of the pasta cooking water before draining the pasta.

STEP 3: Make the sauce. While the pasta is cooking, make the creamy sauce. Melt the butter in the skillet over medium-low heat. Add the chopped shallot and garlic and sauté for 1-2 minutes or until softened and fragrant. Stir in the white wine vinegar. Pour in the heavy cream and bring to a simmer for 5 minutes, stirring occasionally. Turn down the heat to low, add the Gorgonzola and Parmesan cheese and stir until the cheese has melted and the sauce is creamy and smooth. Season to taste with salt and freshly ground black pepper.

STEP 4: Toss together. Slice or chop up the steak. Add the pasta and steak to the pan with the gorgonzola cream sauce and gently toss together. Drizzle in some of the reserved pasta water (only as much as needed) to loosen up the sauce until the consistency perfectly coats the pasta. Or you can save the steak to add on top once plated.

STEP 5: Serve. Plate it up and garnish with some grated parmesan cheese, freshly ground black pepper and some chopped fresh chives or parsley (or baby arugula). Enjoy!

Customize It

Pasta is always something that is easy to customize. Here are a few ideas:

  • Add toasted nuts: Toasted walnuts or pine nuts would be a delicious addition.
  • Make it spicy: Add some chili flakes when sautéing the shallot.
  • Substitute the steak: Swap the steak for chicken breast, pork tenderloin, shrimp or just leave it out altogether for a simple gorgonzola pasta dish.
  • Make it gluten free: Use gluten free pasta.
  • Add some veggies: Some great options are sauteed mushrooms, asparagus, peas, broccoli or sun dried tomatoes.

A Few Tips

  • Don’t forget to save a little of the starchy pasta water: Don’t forget to scoop out some of the starchy pasta water before you drain the pasta. To help me remember, I usually place a measuring cup next to the stove as a visual reminder to scoop some out. Add a little in as needed while tossing the pasta together with the sauce to achieve a beautiful creamy consistency that clings to the pasta.
  • Use a thermometer: The best way to achieve perfectly cooked steak to your preferred level of doneness is to use a digital thermometer. My favorite is the Thermapen.

Storage Tips

  • To store: Leftovers can be stored in an airtight container in the fridge for 3-4 days.
  • To reheat: Reheat on the stovetop over low heat, adding a little extra cream or water to loosen things up.
  • To freeze: I don’t recommend freezing this pasta dish.

Ingredients

  • 8 ounce (227 gram) steak (I like to use filet mignon)
  • ½ teaspoon coarse salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon avocado oil (or other high heat oil)
  • 8 ounces (227 gram) fettuccine, linguine or pasta of choice

For the sauce:

  • 1 tablespoon butter
  • 1 shallot, finely chopped
  • 1 garlic clove, minced
  • 1 teaspoon white wine vinegar
  • 1 cup heavy cream
  • 6 ounces (170 gram) Gorgonzola cheese, crumbled or roughly chopped (see notes)
  • 1/4 cup freshly grated Parmesan cheese
  • salt and freshly ground black pepper, to taste

Optional garnish ideas:

  • grated Parmesan cheese
  • freshly ground black pepper
  • chopped fresh chives or parsley
  • baby arugula

Instructions
