This Chopped Veggie Salad recipe is the perfect summer side dish! It features a combination of fresh summer vegetables and feta cheese tossed in a simple tangy vinaigrette to bring it all together. Super easy to make, colorful and so delicious!
This Chopped Veggie Salad is one of my favorite summer salads! It’s a Mediterranean-style salad loaded with juicy tomatoes, refreshing cucumbers, crunchy peppers, sweet onion, fresh parsley and salty feta all tossed in a simple vinaigrette. Yum!
I never get tired of this simple salad and tend to make it on repeat during the summer months. You can make it year round though…and I do! But it is SUPER AMAZING in the summer when the veggies are local and at their peak. So incredibly delicious!

Ingredients You’ll Need
Ready to make this easy veggie salad? You won’t need lettuce for this one! Here’s what you’ll need…
- Cucumber: Any type you like – your choice!
- Tomatoes: Once again, your choice as to the types of tomatoes you want to include. I love the cherry and heirloom tomatoes during the summer.
- Bell peppers: I like to use two different colors to add some different flavors and make the salad more colorful.
- Sweet onion: Make sure it is sweet! Nobody wants to bite down on a strong tasting piece of raw onion.
- Parsley (or fresh herbs of choice): A good handful of fresh parsley or herbs of your choice.
- Feta Cheese: I love feta for its saltiness. You could also use goat cheese instead.
- Dressing: A simple vinaigrette made from extra virgin olive oil, red wine vinegar, dried oregano, salt and pepper.

How To Make This Chopped Veggie Salad
This salad is super easy to make. Simply…
- Chop: Chop up all the veggies and feta cheese. Place in a large bowl.
- Make the Dressing: Whisk together all the vinaigrette ingredients in a small bowl or shake together in a jar.
- Toss + Serve: Pour over the dressing and toss gently to combine. Enjoy!
Tip: For the tastiest results, set the salad aside for a few minutes before serving. This will allow the juices from the veggies to combine with the vinaigrette to create the most delicious dressing!
Possible Variations
Salads are easy to customize and this one is no exception! Here are a few ideas…
- Switch up the veggies: Add in additional veggies or swap some out with whatever you have on hand or like. Some options include: corn, radishes, raw zucchini, etc. Olives would also be a delicious addition!
- Add some crunch: Sprinkle on some nuts or seeds for crunch.
- Use your favorite fresh herbs: I enjoy chopped fresh parsley in this salad but other herbs like fresh basil, chives, etc. would also be delicious. Or if you grow a herb garden in the summer like I do, just snip off a variety and add it in!
- Make it vegan: This salad is already vegetarian but can also easily be made vegan by swapping the feta cheese with a plant based alternative or leaving it out.
What To Serve It With
This Chopped Veggie Salad makes a great side dish for grilled foods. Pair it with grilled seafood or meat for an easy summer meal. These Marinated Grilled Steaks, Grilled Bratwurst or these Tandoori Chicken Kebabs are all delicious options.
Or simply enjoy a large serving of this salad with a hunk of crusty fresh bread, garlic bread or a piece of this delicious zucchini slice on the deck or balcony with your favorite beverage. Summer perfection!
A Few Questions Answered
A chopped salad is simply a salad where all the ingredients have been chopped up and incorporated together instead of layered. You can get a little bit of everything in each bite which makes it super flavorful.
This salad will last for 2-3 days in the fridge but I highly recommend eating it the same day it is made. The taste and texture of the tomatoes changes in the fridge and some of the other veggies will lose their crunch.
This salad is best served when it is made. However, if you must store it, I would recommend storing the chopped veggies separately from the vinaigrette. Store in an airtight container in the fridge.

Salad:
- 1 cucumber, chopped
- 1 pound (454 g) tomatoes, chopped (if using cherry or grape tomatoes, simply cut into halves or quarters)
- 2 bell peppers, chopped (I like to use two different colors)
- 1/2 sweet onion, chopped
- Handful parsley, chopped (or fresh herbs of choice)
- 1/2 cup crumbled or diced feta cheese (or goat cheese)
Dressing:
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1/2 teaspoon dried oregano
- Himalayan or sea salt & freshly ground pepper, to taste
Instructions
- Chop: Chop up all the veggies and feta cheese. Place in a large bowl.

Sorry, I’m not sure what those counts are for this recipe. I tend to just focus on using real food ingredients in my recipes and not stress about much else. However, if the counts you mention are important for a health condition, etc., I would recommend running it through a nutrition calculator.
