    Pomegranate Salad Dressing

    This Pomegranate Salad Dressing is a delicious, sweet and tangy vinaigrette that is so easy to make! The perfect finishing touch for those winter and holiday salads (or any time of year!).

    I can’t get enough of this pomegranate vinaigrette! It’s sweet and tangy, super delicious and incredibly easy to make. This is the perfect dressing for fall/winter and holiday salads (like my Winter Holiday Salad recipe) but would also be delicious drizzled over summer salads as well. So versatile!

    How To Make Pomegranate Vinaigrette

    This pomegranate salad dressing is super quick and easy to make. Only takes a couple minutes and five ingredients (not including salt and pepper). Let’s make some!

    Ingredients You’ll Need

    First let’s gather up the ingredients. You will need…

    • Avocado Oil (or Olive Oil): I prefer the more neutral taste of avocado oil in this dressing but olive oil also works.
    • Pomegranate Juice: Look for 100% pomegranate juice.
    • Balsamic Vinegar: I like the sweet tanginess of balsamic vinegar in this dressing but you could also substitute red wine vinegar or apple cider vinegar if you prefer.
    • Honey or Maple Syrup: To add some sweetness.
    • Dijon Mustard: The dijon mustard helps to emulsify the dressing into a creamy, even texture.
    • Salt + Pepper: To season.

    Combine And Serve

    Time to make the dressing! Simply whisk together all the vinaigrette ingredients in a small bowl or shake together in a jar. That’s it – easy peasy!

    Make any adjustments to suit your personal tastes. Like it sweeter? Add more honey or maple syrup. Like it tangier? Add more vinegar.

    Storage

    Serve immediately or store in the fridge for up to 1 week (in a sealed container).

    Note: If using olive oil, it may solidify in the fridge. Don’t worry – this is totally normal! Just let it rest at room temperature for 5 to 10 minutes while you make your salad. Then just whisk it back together or shake it up and serve.

    • Both simple side salads or more elaborate dinner salads
    • Fall, winter or holiday salads (it’s the perfect finishing touch for the Winter Holiday Salad shown below)
    • Summer salads with berries (not just for fall/winter: combo of baby spinach, summer berries, grilled chicken and goat cheese with this dressing would be fantastic)
    • Roasted veggies
    • Grilled chicken or fish

    Description

    Ingredients

    Scale
    • 1/4 cup avocado oil (or olive oil)
    • 1/4 cup pomegranate juice
    • 2 tablespoons balsamic vinegar
    • 1 tablespoon honey or maple syrup
    • 1 teaspoon dijon mustard
    • salt + pepper, to taste

    Instructions

    1. Combine dressing:  Whisk together all the ingredients in a small bowl or shake together in a jar.
    2. Serve or store:  Serve immediately or refrigerate in a sealed container for up to 1 week.

    Notes

    • Adjust to taste:  Add salt and pepper to taste and make any other adjustments.  Like it sweeter?  Add more honey or maple syrup.  Like it tangier?  Add more vinegar.
    • Storage Note:  Dressing may solidify in the fridge if using olive oil.  This is normal!  Just let it rest at room temperature for 5 to 10 minutes, shake it up to combine and serve.

        Just curious about something…all of the ingredients are things that do not have to be refrigerated, except maybe the juice. How does it not keep not the fridge over about a week? I love Marzetti’s Pomegranate Vinigairette (sp?) And am hoping this will be similar! Can’t wait to try it!.

          It could definitely last for a few weeks in the fridge depending on the expiry date of the pomegranate juice used. You can usually tell if something has gone off by the smell, look, etc. For simplicity and safety, I have stated to store for 1 week but this vinaigrette can definitely last much longer. Hope you enjoy it!!
