Ingredient Notes
It should come as no shock that in order to make grilled marinated steaks, you will need steaks and marinade!
- Steaks: Since they will be marinated, you don’t need to grab the most expensive cut. I typically don’t marinate a super tender cut like filet mignon. Where the marinade really shines and can make a huge difference is with the somewhat tougher, less expensive cuts of steak. However, you can choose whatever steak you like! Some great cuts for the grill include: New York striploin, sirloin steak, flank steak, skirt steak, ribeye steak, T-bone steaks and filet mignon. I recommend purchasing from a local butcher or farmers market. Another option is a quality meat delivery service like. ButcherBox or truLOCAL.
- Marinade: Use your favorite marinade. I love this steak marinade recipe. Takes just a couple minutes to whip up.

Grab a digital meat thermometer! It’s a must-have tool for perfectly grilled steaks. My favorite is the Thermapen.
How To Make Grilled Marinated Steaks
It’s time to marinate and grill up some steaks! So easy and delicious!
- Make the marinade: Mix together the marinade.
- Marinate steaks: Place steaks in a covered glass dish or large freezer bag and pour the marinade over top. Massage or toss the steaks around until all sides are coated in the marinade. Put in the fridge and let the steak marinate for up to 12 hours (aiming for 4 to 8 hours).
- Grill steaks: Remove steaks from the marinade, pat dry with paper towel and season lightly with salt and pepper. Preheat grill to high heat and sear steaks for 2-3 minutes per side. Turn down the heat to medium-low or place the steaks over indirect heat and continue cooking until they reach your desired level of doneness (use a thermometer – see chart below!).
- Rest and serve: Rest for 5 minutes and enjoy!
Oiling the grill vs oiling the meat: There are two opposing camps on this with lots of disagreement on which is the best method. Try out both and do what works for you! Oiling the grill: Dip a wadded paper towel in a little oil and then using tongs, wipe the oil evenly over the grate before adding the meat. Oiling the meat: Simply brush the steaks with oil before seasoning with salt and pepper.
Steak Internal Temperature and Doneness Chart
Pull the steaks off the grill 5 degrees (F) before your desired level of doneness. The temperature will continue to rise a bit while resting. Example: For medium rare, remove from grill when the internal temperature reads 125F (it will continue to cook a bit more as it rests).

Helpful Tips
Tips For Grilling The Perfect Steak
Here are a few tips for grilling marinated steaks so that they are perfect every time!
- Sear and finish: Sear the steaks first over high heat to get those grill lines and golden brown crust. Then either lower the heat to medium-low or place them over indirect heat to finish cooking.
- Use a thermometer! For a perfectly grilled steak that is not overcooked, make sure to use an instant read thermometer like my favorite – the Thermapen! Pull the steak off the grill once it reaches 5F below your desired degree of doneness (the internal temperature will continue to rise a bit while resting).
- Keep the lid closed: Only open it to flip the steaks and check the temperature. Otherwise, keep it closed to keep the heat in.
- Let it rest: Let your steak rest for 5 minutes before cutting into it so that the juices have time to redistribute through the meat for a juicy, perfect steak!
What To Serve With Grilled Steaks
Here are a few delicious side dish ideas that would pair well with these steaks:
- Potatoes: Baked potatoes and roasted oven fries are two of my favorites. These creamy mashed potatoes are also a great side!
- Grilled Veggies: A mix of grilled veggies like zucchini, peppers, mushrooms and onions or some grilled asparagus would also be delicious!
- Other Veggies: Corn on the cob, Garlic Butter Green Beans, Fajita Veggies.
- Salad: So many possibilities…simple mixed salad, chopped veggie salad, Caesar salad, potato salad, chicken macaroni salad, coleslaw, burrata caprese, cucumber salad, etc. Check out these Easy Summer Salad Recipes for more ideas.
- Bread: Garlic bread, some fresh crusty bread or bruschetta like this burrata bruschetta.
- Shrimp: Serve with shrimp like these Garlic Ginger Shrimp for a delicious surf and turf dinner.
- Sauces: These steaks are delicious as is but I will never pass up a great sauce! Try this Gorgonzola Sauce, Creamy Dijon Sauce, Pistachio Pesto or Sage Pesto drizzled on top.
What To Do With Leftover Steak
Store leftover steak in an airtight container in the fridge and use within 3-4 days.

FAQ
You’ll need about 1/2 cup of marinade per pound of steak. This easy marinade recipe is enough for 1 pound of steak (and can easily be scaled up).
Marinate steak for up to 12 hours. I recommend aiming for 4 to 8 hours. Thinner steaks can get away with less time (minimum of at least 1 hour but I would recommend 3-4 hours for better flavor). For thicker steaks, try to marinate for 4-8 hours.
Heat the grill on high until it reaches 500F. This will give your steaks a nice sear.
The most precise way to know is by checking the internal temperature with a thermometer. Once it reaches 5 degrees (F) below your desired doneness, pull it from the grill and let it rest for 5 minutes (it will continue to cook a bit more as it rests).
Transfer steaks to a cutting board or plate and let them rest for 5 minutes before cutting into them. This allows the juices to redistribute throughout the meat resulting in a juicy steak!

- Preheat grill: Preheat on high until it reaches 500F.
- Prep steaks for grilling: Remove the steaks from the marinade and pat dry with paper towel. Either oil the grill or the steaks (your choice). Season steaks lightly with salt and pepper.
- Grill steaks: Sear steaks over high heat for 2-3 minutes per side. Check the internal temperature and then either lower the heat to medium-low or place the steaks over indirect heat to finish cooking to your desired level of doneness (see notes for steak internal temperature and doneness chart).
